Rainy Day Antidote


It's bleh outside but I'm pretty chipper thanks to these:

Lemon-Strawberry Scones
 (recipe makes 4 large scones) 

1 cup flour
1 egg
¼ cup sugar
¾ tsp baking powder
4 tbsps softened butter
1/3 cup heavy whipping cream
½ cup strawberries
1 tbsp lemon juice
1 tsp lemon zest

Whip cream until stiff.  Fold in dry ingredients and mix thoroughly.  Add butter and egg.  Blend until smooth. 

Cut strawberries into halves and then slice each half lengthwise into fourths.  Add strawberries, lemon zest and juice to dough. 

Knead fruit and juice into dough.  Form dough into dense rectangles.  Dough should have a moist sticky texture.  Bake at 400 degrees for 15 minutes.   Bon Appetit!
